Chicken Fajitas - Grilled ========================= - 3 chicken breasts, cut into 3/4 inch wide strips - 2 limes - Zest + juice (or ~2 tbsp lime juice) - 2 tbsp sugar - 2 tsp dried oregano - 1/2 tsp cayenne pepper* - 1 tsp ground cinnamon - 2 onions* - 3 bell peppers (1 red, 1 yellow or orange, 1 green * - 3 tbsp veg oil (if cooking in pan vs grilling) - guac, salsa, sour cream to serve - Tortillas * can be separated or removed/reduced for picky eaters... Instructions: 1) Mix lime zest, lime juice, sugar, oregano, cayenne + cinnamon. Add chicken + mix well. Marinate for 30min or more 2) Cut onions in half and slice thinly. Cut peppers into 1/2 wide strips 3) Cook chicken on grill a few min on each side (turning once) 4) Cook peppers on upper grill grates until softer and lightly charred 5) cook onions in pan until soft (or chx, pepper + onion together will oil on stove top) 6) Put on tortilla with topics Good sides for other picky eaters: - Corn on cob - Quesedilla - street taco tortilla with cheese cooked both sides briefly to melt cheese and make tortilla light crisp - Chicken variation: Marinade with water + taco seasoning - Brown Rice (can go in burrito too) - Refried beans (don't put in burrito, hides chicken flavor) - Salsa + Tortilla chips
